Orange You Glad I Didn't Say Banana

I must be going through an orange phase! My dinner from last night was yet again from the orange chapter of Color Me Vegan. I made the Sweet Potato Tacos:

This simple taco filling is made from mashed sweet potatoes, cooked onion and red pepper, jalepeno, cayenne, and garlic. Then it's stuffed into a corn tortilla and topped with mango habenero salsa and fresh cilantro. Yum, yum!

I served my tacos with fresh tortilla chips and salsa from On the Border (where the boyfriend works) and Nacho Mama's Ultimate Vegan Queso (from a complimentary jar because they're awesome!).

What are your fave taco fillings?

I have been eyeing (eying? how the hell do you spell that?) that recipe! I love sweet potatoes. I love tacos. I'm sure I'll love them together!

Typically, I fill my tacos with beans, onion, salsa, vegan queso, grilled veggies, and guacamole!

Umm...those look amazing. I love avocados in my tacos, but even more than that, I love mango salsa. The combination of a sweet fruit and usually a realllly spicy pepper makes me sublimely happy.

I love chipotle black beans and tvp, crips lettuce, tomatoes, cilantro, guac, jalapenos and lime sour cream

Were your tacos hot? I mean, they must have been giving the jalapenos and cayenne used. And the garlic, hmm…yum. Now that is a great taco.

I just made tacos last night, I LOVE roasted veggie tacos and a slice of avocado never hurts either :)

It would definitely have to be tacos with black beans, roasted corn and roasted red bell peppers/onions/tomatoes, with avocado slices and some lettuce.

I guess I described a fajita with beans? Lol.

I'm enjoying the orange phase! And thanks for reminding me of the corny (or is that "orangey") joke! Also loved the look of those carrot fries and blueberry sauce. :)

I use a mix of lentils and TVP in my own vegetarian/vegan taco filling. I never thought of using sweet potatoes, but I sure have now.
